- 2 tsps Black tea
- 2 Tbsps Lavender honey (use more or less depending on taste)
- 1 unwaxed lemon (one slice cut and quartered for garnish, the rest juiced)
- 1 sprig Lavender (flowers picked)
- ⅞ cup clear Apple juice
- ⅞ cup Peach Juice
Preparation steps
1.
Put the tea in a pot and pour over 600 ml boiling water. Leave to infuse for around 3 minutes, tip through a strainer and sweeten to taste with the lavender honey. Leave to cool.

Put the tea in a jug with the lemon pieces, lemon juice, lavender flowers, apple juice and peach juice. Chill for at least 1 hour before serving.
3.
To serve, pour into glasses and serve with cakes and pastries if desired.
