- For the syrup
- 2 ⅔ cups sugar
- 2 cups water
- 2 handfuls Rose petal
- 0.333 cup vitamin C powder
- For the rose ice cubes
- 8 small Rose petal

1.
Place the sugar and water in a pan and slowly bring to the boil. Stir until the sugar has dissolved then remove the pan from the heat and let it cool for 15 minutes.

Add the rose petals, stir gently and cover with a lid. Let steep for 24 hours.

Strain through a fine sieve, pressing the rose petals to extract the flavour, then pas the liquid through a jelly bag or fine muslin set into a sieve.

Gently heat about a cup of the liquid with the vitamin C powder until the powder has dissolved then add to the rest of the liquid. Mix well and pour into sterilised bottles.
5.
To serve, dilute the syrup with about five parts of still or sparkling water and add the rose ice cubes.
6.
To make the rose ice cubes, place the rose buds in an ice tray, fill with water and freeze for at least 12 hours.
