2 ½ cups white wine vinegar
¼ cup sugar
2 ½ cups Scented Rose petal

Use heavily scented red or pink petals that are free from chemicals and pesticides -roses bought from a florist aren’t suitable. Remove the heel – the white part at the base (this has a bitter flavour) and wash the flowers gently before use.

Preparation steps

1.
Put the vinegar and sugar into a pan and heat slowly, stirring, until the sugar has dissolved. Cover and leave to become cold.
2.
Put the petals into cold sterilised bottles or jars and pour over the cold vinegar, making sure the rose petals are completely covered.
3.
Seal tightly and leave for 3-4 weeks before using.
