100 grams Chestnut flour (from the deli)
15 grams salt
30 grams Yeast (fresh)
Pastry flour (for the work surface)
2 Apple
2 Tbsps lemon juice
3 onions
2 scallions
400 grams Sour cream

Preparation steps

Combine two types of flour and salt. Dissolve yeast in 320 ml (approximately 1 1/3 cups) of lukewarm water. Slowly mix with the dough hook of a hand mixer with flour mixture, add some water if needed and knead about 5 minutes. Cover with plastic wrap and let sit for 1 hour in a warm place until dough volume has doubled.

Knead dough on a floured work surface and divide into 10-12 equal portions. Each serving roll out on a floured surface to a flat sheet, place well spaced on a baking sheet lined with parchment paper. Let rise again for about 10 minutes.

Preheat oven to 220°C (approximately 425°F). In the meantime, rinse apples and cut into quarters, remove seeds and cut into thin slices then mix with lemon juice. Peel onion, cut in half then into thin half-rings. Rinse and trim scallions and cut into thin rings.

Spread flatbread with sour cream, sprinkle seasoning with salt and pepper and sprinkle with apple slices and onions. Bake in preheated oven for 15-20 minutes. Remove from oven and serve hot or cold.
