12 ozs Salmon fillet
4 bay leaves
½ cup white wine
½ lemon (juice)
salt

12 slices Wholemeal Bread
olive oil

cup Crème fraiche

Preparation steps

1.
Heat the oven to 200°C (180° fan) 400°F gas 6. Grease a baking dish and a baking tray.
2.
Put the salmon in the dish with the bay leaves, wine and lemon juice. Sprinkle lightly with salt and pepper, cover and cook for 15-20 minutes, until just cooked, and still lightly pink inside. Set aside to cool.
3.
Cut out small rounds from the bread using a cutter. Place on the baking tray and brush lightly with olive oil and sprinkle with salt.
4.
Bake for 10–12 minutes, until golden brown. Place on a wire rack to cool completely.
5.
Flake the salmon into chunks.
6.
Place a basil leaf on each bread round and top with a little salmon and creme fraiche.
