Fish with Caramelised Chicory
Melt the butter in a high-sided frying pan. Add the chicory, cut-side-up, and fry until golden for 2 minutes over a hot heat. Turn and cook for 3 minutes over a hot heat.
Sprinkle with brown sugar, lower the heat and slowly cook, turning regularly until caramelised.
Add the coffee, cover and cook for 15 minutes over a lower heat.
Heat the oil in a pan. When it is hot, add the salmon steaks and cook for 5 minutes on either side.
Season. Place the steaks and endives on plates. Coat with 1 tbsp of cooking juice from the endive pan. Sprinkle with pink peppercorns and parsley and serve immediately.
