- 1 Vanilla bean
- 3 eggs
- 3 egg yolks
- ⅓ cup caster sugar (plus extra for sprinkling)
- 1 Tbsp Corn starch

Preparation steps
1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Grease 4-6 ramekins.
2.
Put the milk, cream (apart from 2tablespoons) vanilla pod and the scraped-out seeds into a pan and bring to a boil.
3.
Mix the cornflour with the remaining cream, stir into the hot milk and briefly return to a boil, stirring. Remove from the heat.
4.
Beat the eggs and egg yolks with the sugar until creamy, but not foamy. Stir in the hot milk. Strain through a sieve into the ramekins.
5.
Place the ramekins in a roasting tin or large baking dish and add enough hot water to come 2/3 of the way up the ramekins. Cover with foil and bake for 30- 35 minutes, until the custards have just set, but still have a slight wobble. Leave to cool, then chill for at least 2 hours.
6.
Before serving: heat the grill until very hot. Sprinkle the custards with sugar and put under the grill until the sugar bubbles and caramelises. Alternatively caramelise with a cook's blowtorch.
