- For the dressing
- 3 sprigs mint (leaves roughly chopped)
- 3 cilantro (leaves roughly chopped)
- 2 Tbsps Fish sauce
- 2 Tbsps light soy sauce
- 1 Lime (juiced)
- 1 red chili pepper (deseeded and chopped)
- 1 tsp sugar
- For the salmon
- 4 Salmon (cutlets)
- vegetable oil (for cooking)
- 4 handfuls Corn salad (lamb's lettuce)
- 4 sprigs Dill
- 2 lemons (halved)
- 2 Limes (halved)
Preparation steps

Heat the grill to its highest setting. Mix all the ingredients for the dressing and season with salt and pepper.

Brush the salmon with a little oil and grill for about 2 minutes on each side or until the fish is just cooked through.
3.
Serve the salmon on beds of lamb's lettuce garnished with the dill and lemon and limes halves. Serve the dressing alongside.
