- 150 milliliters dry white wine
- 150 milliliters fish stock
- 1 bay leaf
- 2 allspice
- 1 Tbsp lemon juice
- salt
- freshly ground peppers
- 500 grams white fish fillets skinless and crowed, such as Pollock, catfish, cod)
- 8 slices Whole Wheat Toast
- 4 Tbsps Peanut butter (neutral)
- 2 ripe Banana

Preparation steps
1.
Add white wine to fish stock along with spices and lemon juice. Season with salt and pepper to taste. Warm in a pot and poach fish fillets at low heat until done. Remove, drain and let cool. Peel banana, cut into slices and drizzle with lemon juice.

Spread half the slices of toast with peanut butter and top with banana slices. Place cooked fish over and cover with remaining slices of toast. Cut sandwiches diagonally and serve on a plate with greaseproof paper.
