Fish Pie
Ingredients
- For the dough
- 250 grams Pastry flour
- 20 grams Yeast
- 1 tsp sugar
- lukewarm water
- 1 generous pinch salt
- 1 Tbsp vegetable oil
- Pastry flour (for the work surface)
- eggs (for brushing)
- For the filling
- 400 grams Cod
- 100 grams Rice
- 2 onions
- 2 Tbsps vegetable oil
- 2 tsps fish stock
- 1 tsp lemon juice
- salt
- freshly ground pepper
Preparation steps
For the dough: Mix the flour with sugar and salt mix and make a well in the center. Mix yeast with 100 ml (approximately 3 1/3 ounces) lukewarm water and add into the well. Cover with a little flour mixture and allow to rest about 10 minutes in a warm place. Add oil and knead into a smooth dough. Let rise in a warm place about 40 minutes until dough doubles in size.
For the filling: Cook rice in double salted boiling water. Peel onions, cut into small cubes and fry in hot oil. Pat the fish dry. Roll out dough on a floured surface to about 1 cm (approximately 3/8 inch) thick rectangle. In the middle of the dough, spread a layer of rice, then add onions and fish.
Sprinkle with fish stock and lemon juice, salt and pepper. Fold the dough and press edges together well. Place the pie on a baking sheet lined with parchment paper and let rise for 15 minutes. Preheat oven to 200°C (approximately 400°F). Brush pastry with beaten egg and bake in the oven for about 1 hour. Remove and serve.
