1 Sea bass about 1.2 kg (ready to cook)
1 organic lemon
freshly ground peppers
3 sprigs Basil
3 egg whites
3 kilograms coarse Sea salt

Preparation steps

Preheat the oven to 200°C (approximately 400°F).

Wash the sea bass and pat dry. Cut the lemon into slices. Season the fish inside with some pepper and fill with the lemon slices and the basil.

Whisk the egg whites, stir in the salt and if necessary add as much cold water that the mixture is pliable but not too wet. No more than 200 ml (approximately 3/4 cup) of water. Transfer about half of the salt mixture to an ovenproof dish and place the fish in the middle. Cover with the remaining salt and press to seal. Bake for about 50 minutes. To remove the salt crust, slice with a bread knife laterally around the fish. Remove the crust and serve.
