1 Fish (such as bream, sea bass, about 1.2 kg, ready to cook)
1 organic lemon
freshly ground peppers
2 thyme
3 egg whites
3 kilograms coarse Sea salt

Preparation steps

1.

Preheat the oven to 200°C (approximately 400°F).

Rinse fish and pat dry. Cut lemon into slices. Season fish inside with some pepper and fill with lemon slices and thyme.

Whisk egg whites in a bowl, stir in salt and if necessary add cold water to reach desired consistency (maximum 200 ml or approximately 7 ounces). Place half of egg whites mixture in an ovenproof dish and place fish in the middle. Cover with remaining egg white mixture, press and cook for about 50 minutes in the preheated oven. Remove from the oven, remove salt crust (preferably with a bread knife) and serve.
