2 kilograms course Sea salt

Preparation steps

Rinse fish, pat dry and rub inside and out with pepper. Rinse parsley and pluck leaves from stems. Arrange parsley and lemon slices inside fish. Preheat oven to 200°C (approximately 400°F). Spread half of salt in a suitable, oval baking dish, sprinkle with thyme, place fish on top and cover with remaining salt.

Bake in the preheated oven for about 30-35 minutes. Serve fish in the salt crust.
