- ¼ cup Avocado oil
- 21 ozs skinless Cod (pin-boned)
- 2 Tbsps Chives (chopped)
- 1 ½ cups mixed, assorted Radish (sliced)
- 1 large carrot (thinly sliced)
- 2 Tbsps lemon juice
- cilantro (leaves picked)
- thyme
- 1 Tbsp Edible flowers (optional)
- flaked Sea salt
- freshly ground Black pepper

Preparation steps
1.
Preheat the grill to high. Rub the cod fillet with a couple of tablespoons of oil and position on a grilling tray. Season with salt and pepper, and top with a few chives.
2.
Grill for 4 - 5 minutes, turning occasionally, until the cod is golden and flaking easily.
3.
Meanwhile, mix together the radish, carrot, lemon juice, herbs, remaining oil, edible flowers if using, and seasoning in a mixing bowl to make a quick salad.
4.
Remove the cod from the grill and lift it onto platters. Top with the carrot and radish salad, and serve immediately.
