- 500 grams waxy potatoes
- salt
- 500 grams white fish fillets (such as cod)
- 1 onion
- 120 grams smoked Pancetta (cubed)
- 20 grams butter
- freshly ground peppers
- 2 Tbsps freshly chopped parsley

Preparation steps

Rinse the potatoes and cook for about 20 minutes in boiling salted water. Drain, rinse in cold water, peel and leave to cool. Rinse the fish, pat dry and cut into bite-size pieces.

Peel the onion and cut into small cubes. Saute the bacon in a pan, add some butter and cook the onion until translucent. Cut the potatoes into slices, add and fry until golden brown, turning occasionally. Add the fish pieces and cook, gently stirring until golden brown. Season with salt and pepper and serve sprinkled with freshly chopped parsley.
