4 large, baking potatoes
2 Tbsps olive oil
3 cups Tuna (drained of oil)
3.333 cups sweet Corn (drained and rinsed)
2 Tbsps parsley (chopped)
¼ cup butter
salt
peppers

Preparation steps

1.
Heat the oven to 220C (200C fan) 425F, gas 7.
2.
Wash and dry the potatoes then rub them with the oil and bake on the middle shelf of the oven for 1 hour 15 minutes or until they feel soft and tender when squeezed.
3.
Mix the tuna and sweetcorn with the parsley.
4.
Split the potatoes open, remove the cooked potato flesh and mix with the butter. Season with salt and pepper and return to the potato skins.
5.
Spoon over the tuna and sweetcorn and serve immediately.
