300 milliliters dry Red wine
125 grams sugar

200 grams Goat cheese (roll)
4 Figs
70 grams lamb's lettuce
2 Tbsps olive oil (for drizzling)
Fleur de sel

Preparation steps

1.

For the syrup, melt the sugar over low heat in a large pot, pour in the red wine and let it boil down a little. The syrup should have a honey-like consistency. Set aside and allow to cool.

Preheat the broiler. Cut the goat cheese into 4 slices 1 cm (approximately 1/2 inch) thick and place on a baking sheet lined with parchment paper. Broil in the oven until golden brown.

Meanwhile clean the figs and cut in half lengthwise or quarter. Trim the lamb's lettuce, rinse and spin dry.

Distribute some lettuce leaves on a plate, place the figs and goat cheese on top, drizzle with a little olive oil and sprinkle with fleur de sel. Serve decorated with red wine syrup.
