- 2 Passion fruit (halved)
- 1 Lime
- 1 Mango (pitted and diced)
- 1 ⅔ cups Coconut milk (chilled)
- 1 cup cold water
- 1 Tbsp light Agave syrup
- 1 cup crushed Ice
- 1 cup Shredded coconut

For a thicker smoothie, add a generous dollop of vanilla ice cream before blending.
Preparation steps

Scoop the pulp and seeds from the passionfruit halves into a sieve set over a bowl. Pass the pulp and flesh through the sieve, collecting the puree in the bowl.

Finely zest the lime and then cut it in half, cutting one half into wedges. Squeeze the other half into the passionfruit puree and stir in the grated zest.

Scrape the passionfruit and lime juice puree into a food processor or blender and add the mango, coconut milk, water, and agave nectar.
4.
Blend on high for 2 minutes. Stir well, add the ice, and blend for a further minute.
5.
Rub the rims of four serving glasses with the lime wedges. Dip in a shallow plate of the desiccated coconut to coat the rims.
6.
Fill with the smoothie and serve immediately.
