- ½ Papaya
- ½ green Galia melon
- 12 Lychee
- 3 ozs Shredded coconut
- 4 Pineapple
- 2 Tbsps lemon juice
- 1 Tbsp powdered sugar
- 1 Tbsp freshly chopped mint

Preparation steps
1.
Halve the papaya and melon, remove seeds, peel and dice the flesh. Peel, halve and pit the lychees. Toast the grated coconut in a dry pan until golden brown. Remove and set aside.

Cut the lid from the 4 baby pineapples and scoop out the pineapple flesh. Leave an edge of about 1/8 inch. Dice the pineapple flesh and toss with the other fruit, lemon juice, sugar and mint. Fill the 4 hollowed pineapples. Serve sprinkled with grated coconut.
