- 32 ozs potatoes (cut into chunks)

- 4 Tbsps milk
- ¼ cup butter
- 2 Tbsps Oil
- 1 onion (finely chopped)
- 4 carrots (chopped)
- 24 ozs lean Ground beef
- 2 Tbsps tomato puree
Preparation steps

Put the potatoes and a pinch of salt in a pan and cover with water. Bring to a boil, cover and cook for 20-25 minutes until tender. Drain well and mash with the butter and milk until smooth. Season to taste with salt and pepper. Set aside.

Heat the oven to 190°C (170° fan) 375°F gas 5. Lightly grease a baking dish.

Heat the oil in a pan. Add the onion and carrots and cook gently for 3-4 minutes until just beginning to soften but not colour. Stir in the minced beef and cook for 2-3 minutes until browned, breaking up any lumps with the back of a wooden spoon. Stir in the tomato puree and cook gently for another 10 minutes until completely tender. Season to taste with salt and pepper.

Spoon the minced beef mixture into the baking dish and spread the mashed potatoes on top, roughing the top with a fork.

Cook in the oven for 20-25 minutes, until the potatoes are browned and the filling is piping hot
