Preparation steps

1.

Rinse elderflowers and shake dry. Pour water into a large pot, add rinsed flowers, cover and let rest overnight. Drain through a sieve (or strainer) and collect coarse flowering branches.

2.

Pour liquid back into the rinsed saucepan, add sugar, stir and bring to a boil while stirring. Rinse lemons, squeeze the juice and add to the pot.

3.

Add squeezed lemon and leave to simmer over low heat for about 10 minutes. Remove lemons and pour everything through a fine sieve. Allow to cool, add mineral water, raspberry syrup and grenadine, gently mix and chill in a bottle.

4.

Serve in a glass with frozen berries and ice cubes. Top up with carbonated mineral water if desired.
