- 150 milliliters Wine vinegar
- 1 Tbsp sugar
- 1 tsp peppercorns

Preparation steps

Rinse eel, pat dry and cut into 3 cm (approximately 1 inch) pieces. Wrap each piece with 2 or 3 sage leaves and secure with kitchen twine.

Peel onion and cut into rings. Cut lemon into slices. Brown the pieces of eel in hot oil on all sides. Place in mason jars with lemon slices. Saute onion in pan drippings until translucent. Add wine vinegar and 150 ml (approximately 1/2 cup) water. Stir in sugar and peppercorns and bring to a boil. Season with salt. Pour liquid into glasses over eel, making sure that everything is covered. Close jars tightly and let sit for a few days before serving.
