- 16 Sage
- 8 slices Bacon
- ½ bunch parsley
- 2 Tbsps lemon juice
- 2 Tbsps vegetable oil
- salt
- freshly ground peppers

Preparation steps
1.
Preheat the oven to 140°C (approximately 285°F). Top the eel with 2 sage leaves and wrap in a slice of bacon and tie with kitchen string. Heat the oil in a skillet and saute until the bacon is starting to crisp. Remove and transfer to an ovenproof casserole dish. Scatter the remaining sage leaves over it and bake on the middle rack of the oven unti;l piping hot, about 10 minutes. in the preheated oven. Remove the strings and serve sprinkled with parsley and lemon juice.

Serve with potatoes or baguette as a side dish.
