Preparation steps
1.
Cut the eel into about 4-cm (approximately 1.5-inch) pieces. Season with salt and pepper and wrap each with 2 sage leaves in 1 slice of ham.

In a large pan, sauté in hot butter about 3 minutes on each side to sear. Transfer to baking dish and add remaining sage. Finish cooking in a preheated oven at 180°C (approximately 350°F) for about 6 minutes.
3.
Drizzle with lemon juice to serve. Serve with a baguette.
