Easy Pumpkin Oatmeal Scones
Heat the oven to 180°C / 350°F. Line 2 baking trays with non-stick baking paper.
Beat the butter and sugars in a mixing bowl until fluffy. Beat in the egg, vanilla and pumpkin.
Stir in the oats, baking powder, cinnamon, salt, raisins and flour.
Drop heaped teaspoons on to the baking trays and bake for 12-15 minutes, until slightly browned.
Cool on the baking trays for a few minutes, then place on a wire rack to cool completely.
