Preparation steps

1.

Rinse the broccoli, trim, chop and blanch for 2-3 minutes in boiling salted water. Drain, rinse with cold water and drain well.

2.

Thaw the puff pastry.

3.

Cut the salmon into strips. Beat the eggs and mix with 2 teaspoon sesame oil and cayenne pepper, and season with salt. Add in the salmon and blanched broccoli, and stir.

4.

To prepare the dumplings, dust the puff pastry slices on both sides with flour and roll out with a rolling pin into 12 circles (diameter about 8 cm) (diameter approximately 3¼ inches). Place the broccoli and salmon mixture over half of the rolled pastry circles. Place the other 6 circles over as cover, press the edges well and press firmly with a fork.

5.

Whisk the milk and the egg yolk, place the dumplings with some distance on a baking tray lined with baking paper and brush with the egg-milk mixture. Bake in a preheated oven at 200°C (fan: 180°C, gas mark 3) (approximately 400°F) until golden brown, about 25 minutes. Remove from the oven, arrange on plates and serve garnished with chives.
