Preparation steps

Cut the lobsters in half lengthways, break off the claws and remove the meat from the claws and tail.
2.
Chop the meat and return it to the body of the lobster.
3.
Heat the butter in a small pan and gently cook the shallot until soft but now brown. Add the stock and wine and bring to a simmer then reduce by about a half.
4.
Add the cream and mustard, simmer until thickened then add the lemon juice and season with salt and pepper.
5.
Heat the grill to its highest setting. Pour the sauce over the lobsters and grill until browned and bubbling. Serve immediately.
