- 30 dried Date
- 80 grams Shelled pistachio
- 50 grams sugar
- 30 grams Palm oil
- 1 tsp Rose water

Preparation steps
1.
For mocha: add coffee powder and sugar to a copper or brass jug, add 150 ml (approximately 3/5 cup) of cold water and stir well. Place on the stove and heat. Once mocha starts boiling, remove from heat and place foam into two coffee cups.

Bring mocha to a boil again, remove from heat and wait until foam subsides.

Boil one more time and pour mocha into cups.

Let mocha stand for a few minutes to let coffee settle. Serve.

Slit dates and pit. Chop pistachios with 40 grams (approximately 1 1/2 ounce) of sugar in a food processor and mix until smooth with palm oil and rose water.
6.
Stuff dates with pistachio cream, letting it show slightly. Roll dates in remaining sugar and refrigerate until ready to serve.
