Mocha Cream with Cherries
Break the dark chocolate into pieces and place in a pot with 2 tablespoons of water. Melt the chocolate slowly and then allow to cool again.
Whip the cream in a bowl until stiff and fold in the cooled (but still liquid) chocolate.
Dissolve the coffee powder in 2 tablespoons of warm water in a cup.
Mix the quark, first with the sugar and then with the coffee in a large bowl. Stir in the chocolate cream and mix thoroughly.
Rinse, drain and pit the cherries, collecting the juice. Fold the cherries and juice into the mocha cream and pour into tall glasses. Serve garnished with mocha beans.
