250 grams Crabmeat
200 milliliters Coconut milk
1 tsp Red Curry paste
1 finely chopped garlic clove
1 finely chopped chili pepper
½ tsp freshly grated ginger
1 egg
Fish sauce

Preparation steps

Rinse banana leaves, drain and wipe dry. Using a small dish as a pattern, cut out four circles, each about 15 cm (approximately 6 inches) diameter. Soak banana leaves briefly in hot water until moldable, drain and pat dry.

To form basket, gather outside edges of banana leaf circle to middle and fold on one side and staple on the fold. Repeat steps on opposite side so that a basket is formed.

Place cups in a bamboo steamer. For the filling, mix diced crab meat, coconut milk, curry paste, garlic, chilli, ginger and egg in a bowl. Season with fish sauce and place filling into banana leaf baskets. Sprinkle Thai basil leaves over filling and place steamer over a wok of boiling water. Cover and steam for about 12-15 minutes.
