2 spring onions (i.e.Cipollini onions)
1 bunch scallions
2 Limes
4 Lime leaves
½ Cucumber
14 ozs Tuna steak
1 Tbsp sesame oil
2 handfuls Sprout (mung bean)
Fresh herbs (to taste)
4 Tbsps butter
1 tsp Curry powder
2 Tbsps light soy sauce
salt

150 grams Rice noodles

Preparation steps

1.

Trim scallions and cut diagonally into rings. Rinse rice noodles in plenty of cold water. Rinse the sprouts under cold water and drain well. Peel cucumber and cut into sticks. Peel the spring onion and cut into rings.

Cut tuna fillet into thin strips. Squeeze juice from half of 1 lime and marinate the fish fillet in it.

Drain the noodles and cook in plenty of salted water. Drain well. Heat the oil in a wok and fry the tuna fillet briefly, then remove from the wok and set aside. Add the butter and curry powder to the wok and stir-fry vegetables and herbs briefly. Arrange noodles, tuna and vegetables on warmed plates and serve seasoned with soy sauce, salt and pepper. Garnish with lime wedges.
