750 grams fresh black Currants
1 Vanilla bean
2 heaping tsps Agar
200 milliliters black Currant juice
300 grams sugar
1 Tbsp lemon juice

Preparation steps

Remove the currants from the vine, then rinse and drain well. Slice the vanilla bean lengthwise and scrape out the seeds. Mix the agar with 2 tablespoons of the juice. Lightly crush the currants in a pot with a potato masher. Add the remaining juice, the agar, and the sugar together. Simmer for 2 minutes, then remove from the heat. Add the vanilla seeds and the lemon juice to the currant mixture. Line a loaf pan with plastic wrap, and chill for 4 hours in the refrigerator to set.

Remove the jelly from the pan, and place on a long platter. Serve with bread and cheese.
