200 grams Cultured butter (and butter for the mold)
230 grams sugar
10 grams Vanilla sugar
3 eggs
200 grams Pastry flour (and flour for the mold)
1 teaspoon Baking powder
milk (If required)
3 sheets gelatin
150 milliliters Whipped cream
500 grams Red Currants
250 grams Quark

Preparation steps

1.

Cream butter until fluffy. Add 200 grams (approximately 7 ounces) sugar and vanilla sugar while stirring. Stir in eggs one at a time.

Mix flour with baking powder and stir into egg mixture. If dough is too firm, add a little milk.

Lightly grease a springform pan in 26 cm diameter (approximately 10 inch) with butter and dust with flour. Pour in mixture and smooth. Bake in preheated oven at 200°C (fan 175°C; gas mark 3) (approximately 390°F) until golden brown on middle rack for 30-40 minutes. Remove and allow to cool for 5-10 minutes. Carefully detach from pan and allow to cool completely.

Soak gelatine in cold water. Whip cream until stiff. Rinse 100 grams (approximately 3-1/2 ounces) currants, shake dry, mash and mix with remaining sugar. Warm 4 tablespoons of mixture and dissolve gelatine in it. Add gelatine mixture into currant mixture and stir in quark. Fold cream into mixture and spread onto cake.

Rinse and drain others berries and spread onto quark cream. Chill for at least 1 hour then slice and serve.
