For the salad
2 cups canned White bean (drained and rinsed)
0.333 cup Dried Tomatoes (in oil, drained and chopped)
3 Tomatoes (cut into wedges)
1 Leek (thinly sliced)
cup Chorizo (thinly sliced)
1 bunch parsley (leaves removed)
1 Cucumber (diced)
For the dressing
4 Tbsps olive oil
1 tsp coarse Mustard
½ lemon (juiced)
