- 2 cups canned White bean (drained and rinsed)
- ⅓ cup Dried Tomatoes (in oil, drained and chopped)
- 3 Tomatoes (cut into wedges)
- 1 Leek (thinly sliced)
- ⅔ cup Chorizo (thinly sliced)
- 1 bunch parsley (leaves removed)
- 1 Cucumber (diced)

Preparation steps
1.
Mix all the salad ingredients together in a large bowl.
2.
Mix together the oil, mustard and lemon juice and season with salt and ground black pepper. Drizzle over the salad and served with flat bread.
