- 1 ⅓ cups Apricot (stoned and chopped)
- ⅓ cup soft light brown sugar
- ½ tsp ground cinnamon

Preparation steps
1.
Place the apricots, ground cinnamon and sugar in a heavy-based saucepan.
2.
Cover with 100ml of water and bring to a simmer over a medium heat.
3.
Cover with a lid, lower the heat and cook gently for 15-20 minutes until very soft and broken down. Serve warm or cold in serving mugs.
