- 1 Tbsp olive oil
- 2 shallots (finely chopped)
- 2 inches fresh ginger (peeled and finely chopped)
- 3 ⅓ cups Dried Plum (cored and roughly chopped)
- 2 Tbsps soft dark brown sugar
- 2 Tbsps Red wine vinegar
- 3 whole cloves
- 1 cup Golden raisins
- salt
- freshly ground peppers

Preparation steps
1.
In a saucepan, heat the olive oil and gently sweat the shallots and ginger until soft.

Add the remaining ingredients (apart from the raisins) as well as 3 tablespoons of water.
3.
Add raisins then cover and cook slowly for 30 minutes or until the plums are soft and the liquid is syrupy. Season to taste with salt and pepper.
