- 1 shallot (finely chopped)
- 2 Avocados
- 3 Kiwi
- 3 Tbsps lemon juice
- 4 Tbsps vegetable oil
- 1 tsp sugar
- salt
- peppers (freshly ground)
- fresh parsley (for garnish)

Preparation steps
1.
Rinse the cucumber, cut in half lengthwise and remove seeds with a small spoon. Cut the cucumber into 0.5 x 3 cm (approximately 1/4 x 1 1/4 inch) strips.

Halve the avocados lengthwise and remove pits. Cut into thin slices. Drizzle with 2 tablespoons of lemon juice.

Peel and slice the kiwis.
4.
In a bowl, whisk the remaining lemon juice with salt, pepper, sugar and oil. Toss with the cucumbers, shallots, avocados and kiwis. Serve garnished with parsley and season with salt and pepper to taste.
