4 Tbsps White vinegar
½ tsp Dijon Mustard
1 tsp honey

200 grams thinly sliced Smoked salmon
Cress (for garnish)

Preparation steps

1.

Cook the eggs for about 10 minutes in simmering water. Rinse under cold water, peel and cut into thin slices. Rinse the cucumber, cut off the ends and slice very thinly on a mandolin or with a sharp knife. Whisk together the canola oil, white wine vinegar, Dijon mustard and honey until smooth. Season with salt and pepper to taste.

Arrange the cucumber slices, eggs and smoked salmon on plates and drizzle with the dressing. Season with salt and pepper and garnish with cress.
