Preparation steps

Rinse the peppers, cut in half, remove the ribs and seeds and cut into medium-sized pieces. Rinse the tomatoes and cut into quarters.

Heat 3 tablespoons oil in a pan, add the peppers, cover and simmer over medium heat for 8-10 minutes, stirring occasionally. After about 8 minutes, stir in the tomatoes, cover and continue to simmer. If the peppers are not soft, then add 2-3 tablespoons of water and simmer for 2 minutes. Season with salt, pepper and sugar.

Drain 8 olives, remove the pits and cut in half. Toast the baguette slices, drizzle each with 1 teaspoon oil and sprinkle with a little salt. Top with 1-2 tablespoons of the peppers and half an olive. Garnish with basil and serve with red wine, if desired.
