- Oil (for deep frying)
- 14 ozs firm Tofu (sliced)
- 2 Tbsps sunflower oil
- 1 onion (chopped)
- 2 cloves garlic cloves (crushed)
- 2 carrots (thinly sliced)
- 1 yellow Bell pepper (seeds removed & cut into strips)
- 1 orange Bell pepper (seeds removed & cut into strips)
- 5 ozs Bean sprout
- ½ Tbsp Corn starch
- ½ cup vegetable stock
- 1 Tbsp light soy sauce
- salt
- peppers
- To serve
- boiled Rice

Preparation steps
1.
Heat the oil for deep frying in a large deep pan until hot. Add the tofu and cook for 4-5 minutes until golden. Drain on absorbent kitchen paper and set aside.
2.
Heat the sunflower oil in a wok or large skillet (frying pan) and cook the onion until beginning to soften.
3.
Add the garlic and remaining vegetables and cook for 3-5 minutes over a high heat until tender.
4.
Mix together the cornstarch, stock and soy sauce. Add to the pan and cook for 2 minutes until thickened. Season to taste with salt and pepper.
5.
Stir in the tofu and heat through for 1 minute.
6.
Divide between 4 serving bowls and serve with boiled rice.
