Ingredients

For the potato croquettes
¾ kilogram starchy potatoes
salt
Nutmeg
2 egg yolks
30 grams Pastry flour
For breading
2 egg whites
1 Tbsp water
breadcrumbs

Preparation steps

1.

Peel the potatoes, coarsely chop and cook in boiling salted water until soft, about 20 minutes. Drain, let the steam evaporate and press through a potato ricer while still hot. Mix in the egg yolks and season with salt and nutmeg. Add flour, if necessary.

Form the mixture into 3 cm thick logs (approximately 1 inch) then cut into 5 cm long croquettes (approximately 2 inches).

Heat oil in a deep, wide saucepan to 350°F.

Whisk the egg whites and water together. 

5.

Dip the croquettes in egg whites then coat in breadcrumbs. Deep-fry until golden brown. Serve immediately.
