Preparation steps

Chop peanuts and place in a shalow soup bowl. Whisk eggs in a separate bowl. Place flour in another shalow bowl. Cut the meat into 4 cm (approximately 1 1/2 inch) pieces, season with salt and pepper, coat with flour, tapping off excess flour well.
2.
Dip the pieces of chicken in the egg and roll in peanuts. In hot peanut oil, fry until golden brown and place on paper towels to drain. Serve on lettuce leaves.
