For the batter
125 grams Pastry flour
1 pinch salt
400 milliliters milk
2 eggs (medium)
1 packet Vanilla sugar
2 Tbsps clarified butter (for frying)
Also
500 grams mixed Berry
250 milliliters red Currant juice
2 tsps cornstarch
1 packet Vanilla sugar
Lemon balm (for garnish)

Preparation steps

1.

For the batter, mix flour with salt, milk, eggs and vanilla until smooth. Let rest for 30 minutes.

Trim berries and soak. Cut strawberries smaller as needed. Boil currant juice. Stir cornstarch with a little cold water and add to juice. Stir and bring to a boil again. Stir in berries and vanilla. Cool.

3.

Stir batter. Heat butter in portions and add batter in portions. Cook thin crepes until all batter has been used. Serve crepes with berries and garnished with lemon balm.
