½ cup Dark chocolate (chopped)
1 cup Buckwheat (heaped)
3.333 cups mixed Berry (e. g strawberries, blueberries, raspberries, blackberries)
6 sheets gelatin
4 Tbsps concentrated Pear juice
2 ¼ cups Yogurt
1 cup Quark (scant)
1 Vanilla bean (seeds scrapped out)
cup cream (whipped)

Preparation steps

1.
Melt the chocolate in a bain marie. Dry roast the buckwheat in a pan and then stir it into the chocolate. Press the mixture into the bottom of a cake tin and place in the fridge.

Set aside half the berries to garnish

To make the cream, soften the gelatine in cold water. Gently heat the pear juice and then wring out the gelatine. Add the gelatine to the juice and stir until it dissolves.

Mix together the yogurt, quark and the vanilla seeds and stir 4-5 tbsp of the mixture into the gelatine mixture. Then stir the gelatine mixture into the yogurt mixture.
5.
Fold half the berries into the whipped cream and stir into the gelatine-yogurt mixture.
6.
Spread the cream onto the base in the cake tin and chill for at least 4 hours.
7.
Serve on a cake stand garnished with the remaining berries.
