- 18 ozs Linguine
- 4 cups Mushrooms (sliced)
- 2 Tbsps vegetable oil
- 1 clove garlic cloves (finely chopped)
- 4 scallions (sliced into rings)
- ⅜ cup vegetable stock
- ⅔ cup cream
- 2 Tbsps freshly chopped parsley

Preparation steps
1.
Boil the pasta in salted water until al dente.

Fry the mushrooms in hot oil in a large frying pan until golden brown. Add the garlic and spring onions and fry together briefly, then deglaze with the stock. Pour in the cream and simmer for a few minutes to thicken slightly.
3.
Stir in the parsley and the drained pasta, season to taste with salt and ground black pepper, and serve.
