- 2 Tbsps vegetable oil
- 2 Leeks (sliced)
- 9 ozs Bacon (thickly sliced and chopped)
- 3 cups fish stock
- 4 potatoes (peeled and cut into chunks)
- 16 ozs Sea bass fillet (cut into chunks)
- 16 ozs mussels (cleaned and beards removed)
- 1 cup cream (30% fat)
- parsley (to garnish)
- Cracker (to garnish)

1 Cutting board, 1 Peeler, 1 Small knife, 1 Measuring cups, 1 Small pot mit Deckel, 1 Citrus juicer, 1 Tablespoon, 1 Immersion blender
Preparation steps
1.
Melt the butter and oil in large pan and gently cook the leeks for 3 minutes.
2.
Add the bacon, cook for 2 minutes then add the stock and potatoes and bring to a boil.
3.
Simmer for 15 minutes then add the sea bass and mussels, cover with a lid and cook for 3 minutes or until the mussels have opened.
4.
Remove the mussels from their shells and return them to the pan, discarding any mussels that have not opened.
5.
Add the cream, season with salt and pepper and return to a simmer. Season with salt and pepper and serve garnished with parsley and broken crackers.
