- ¾ cup uncooked white rice
- 2 cups milk (divided)
- ⅓ cup granulated sugar
- 1 pinch salt
- 1 egg (beaten)
- 1 Tbsp butter
- ½ tsp pure vanilla extract
- Summer Berries
- 1 cup frozen, mixed Berry (raspberries, blueberries, red currants)
- 3 Tbsps granulated sugar
- 3 Tbsps water

Preparation steps
1.
Bring 1 1/2 cups water to boil, in a medium saucepan. Add rice and stir. Reduce heat and simmer for 20 minutes.

Combine cooked rice, 1 1/2 cups milk, sugar and salt. Cook over medium heat until creamy, 15 minutes or so. Stir in remaining 1/2 cup milk and beaten egg. Cook 2-4 minutes more, stirring constantly.
3.
Remove from heat, stir in butter and vanilla.

In a medium saucepan, combine the frozen berries, sugar and water. Heat for 5 minutes, stirring frequently, until the fruit is tender and the sugar is dissolved.
5.
Serve pudding warm with berry topping.
