- 600 grams Peas (in the pod)
- 1 garlic clove
- 1 onion
- 1 tsp vegetable oil
- salt
- peppers
- 400 milliliters Vegetable broth
- 2 Tbsps lemon juice (and a little lemon zest)
- 50 milliliters milk
- fresh Peppermint
Preparation steps

Remove the peas from their pods. Chop the garlic and onion and sweat in the oil until translucent. Add the peas and season with salt and pepper. Deglaze with the broth and then add the lemon juice and lemon zest. Simmer for around 10 minutes.

Set 1/2 of the peas aside. Purée the remaining peas, add the milk, a few mint leaves and the reserved peas and bring to a boil. Season with salt and pepper. Garnish with mint leaves to serve.
