- 125 grams potatoes
- 1 onion
- 1 ⅕ liters Vegetable broth
- 1 Tbsp chopped parsley
- 10 chopped mint
- freshly grated Nutmeg
- salt
- freshly ground peppers
- 300 grams frozen Peas
- 1 Tbsp lemon juice
- 100 milliliters Whipped cream

Preparation steps

Peel and dice the potatoes and onion. Sauté the onion in a large pot until translucent. Add the potatoes and peas and sauté briefly. Stir in the vegetable broth, cover and simmer for about 20 minutes. Add the chopped parsley and mint and puree with an immersion blender until smooth. Strain the soup through a fine mesh sieve and return to the pot.

Season to taste with salt, pepper and nutmeg. Stir in the lemon juice and about half of the whipping cream. Ladle the soup into bowls, drizzle with the remaining cream, garnish with fresh mint and serve.
