- 2 Leeks
- ¼ cup butter
- 1 tsp chopped thyme
- 1 clove garlic cloves
- 4 cups Chicken broth (or vegetable broth)
- 2 cups peas
- 1 Lettuce
- 1 Tbsp chopped mint
- 1 ⅓ cups cream
- salt
- freshly ground Black pepper
- Crouton (to serve)

1 Small skillet, 1 Small bowl, 1 Cutting board, 1 Large knife, 1 Tablespoon, 1 Teaspoon, 8 Wooden skewers, 1 Citrus juicer, 1 Plate
Preparation steps

Wash and trim the leeks and cut into rings. Peel and chop the garlic. Wash and shred the lettuce. Heat the butter in a pan and saute the leeks, thyme and garlic. Add the broth and bring to a boil. Add the peas and lettuce and cook for 5 – 6 minutes, until the peas are soft. Remove from the heat and puree finely. Add the mint and cream and return to a boil. Season with salt and pepper and serve scattered with croutons.
